Killer Pork Belly Sandwich Recipe

Ingredients
- Pork Belly (usually range from 3 to 5 lbs.)
- 10 Eggs
- 10 Brioche Buns or equal
- Arugula
- Dill or sweet pickles (your choice)
- Vegetable Oil
- Obie’s Double Garlic Pepper
- Smokin’ Guns Mild
- Cimarron Doc Sweet Rib Rub
- Light splash of favorite BBQ sauce
- Apple Wood Chunks or Apple Pellets
Instructions
Meat Prep
- Apply a light coat of vegetable oil to both sides of the belly to help the seasonings stick.
- Apply a light coat of Obie Cue’s Double Garlic Pepper.
- Apply a medium coat of Smokin’ Guns Mild.
- Apply a medium coat of Cimarron Doc Sweet Rib Rub.
- If possible, let sit in the fridge overnight
Cooking
- Fire up your smoker or grill and bring it up to temp.
- Add smoking wood to your smoker, or if using a grill set up for offset cooking, add your pellets.
- Put the belly on a rack with a pan underneath.
- Place the belly in the cooker.
- Remove the belly when it reaches an internal temp of 190 degrees.
- Cover and let sit for 15 minutes
- Fry the eggs sunny side up well done.
- While the belly rests, apply a light coat of BBQ sauce to the bun.
- Slice belly into thin strips and apply 4-6 oz. to the bun
- Top with one egg, arugula, pickles and sprinkle with olive oil
